Avocado Toast with Red Onion & Soft-Boiled Egg

INGREDIENTS

  • 2 eggs; soft boiled
  • 2 slices good bread; toasted
  • 1 avocado
  • ¼ red onion, thinly sliced
  • Salt & pepper to taste
  • Serves 2

DIRECTIONS

1In a small pan, bring a pot of water to a gentle boil and lower in refrigerated eggs. Cook eggs for 6 to 6.5 minutes while maintaining a simmer, then immediately transfer eggs to an ice bath for 2-3 minutes to stop cooking and make them easy to peel. Your eggs will be slightly runny, but the whites set.

 While eggs are cooking, slice onions and cut avocado and add flesh to a bowl and mash with a fork.

After transferring eggs to a water bath, place bread in toaster and toast.

Spread each piece of toast with avocado mash and top with red onion slices.

Cut egg in half and place on top of avocado toast and salt and pepper to taste

NOTE: If you prefer, you can also fry your egg.
