Citrus Avocado Salad

INGREDIENTS

    For the salad:

    • 3 cups mixed greens
    • 2 medium navel oranges; peeled and sliced
    • 1 small grapefruit, peeled and sliced
    • 1 avocado, cubed
    • ¼ red onion; thinly sliced
    • ¼ cup sunflower seeds

    For the vinaigrette:

    • 1/4 cup extra virgin olive oil
    • 2 tbsp champagne vinegar
    • 2 tbsp fresh orange juice
    • 1 tablespoon Dijon mustard
    • 1 tablespoon honey
    • Salt and pepper to taste
    • Serves 4-6

    DIRECTIONS

    Peel and segment oranges and grapefruit, removing pith. Remove any seeds and slice citrus thinly. 

    Cut avocado, remove pit and slice and cube flesh

    In a jar, add all vinaigrette ingredients, add lid and shake until emulsified. 

    In a large bowl, add mixed greens, citrus, onions, avocado and red onion and toss. 

    Add some vinaigrette to bowl and toss. Add more as needed, dressing salad to your desired consistency. 

    Plate salad and top with sunflower seeds.
