Summer Peach & Basil Salad with Red Onions

INGREDIENTS

    • 3-4 peaches or nectarines; pitted and sliced in ½ inch wedges
    • ½ red onion, thinly sliced
    • ½ cup fresh basil; chiffonade
    • Juice of 1/2 lemon
    • 1 tablespoon extra-virgin olive oil
    • Salt & Pepper to taste
    • Balsamic Vinegar Glaze for finishing/serving
    • Feta Cheese, crumbled
    • Serves 4-6

    DIRECTIONS

    Lightly whisk lemon juice and olive oil in a medium bowl. 

    Add peaches, onions and basil to bowl with lemon juice mixture and lightly toss and add salt and pepper to taste. 

    When plated, drizzle with balsamic vinegar glaze and top with feta cheese.
